Well, as far as music goes, there were some amazing cutting-edge avant-garde bands from the 70's that have heavily influenced current music.

Some of the best 70's bands like The New York Dolls, Sex Pistols, Velvet Underground, and Iggy Pop have influenced more current bands like Red Hot Chilli Peppers, Nirvana (not too current, but still extremely talented) Rancid,White Stripes,The Vines, Good Charlotte, and many others. Those 70's punk bands were really what punk was all about: underground, experimental, angst-ridden, and dangerous.

As far as 70's movie stars, we have so many 70's films being remade. Everything from Shaft to Charlies Angels. Not to mention the fact that The Godfather films are the basis for which every good crime drama draws their inspiration from.

What I'm still waiting for is GOOD folk bands to reemerge. Some of my fave artists from the 70's were folk singers such as Gordon Lightfoot, Jim Croce, Cat Stevens (one of the greatest songwriters ever, in my opinion), Don McCleen. "If You Could Read My Mind" was a gorgeous song, but they made a hideous dance remake of it for that movie "54". Eww.

Well, didn't want to be too extensive on this topic, cause I wanna hear what u all think. =-)

You should've mentioned David Bowie and Bryan Ferry/Roxy Music.

Those two were 70's acts that heavily influenced (in terms of musical and wardrobe style) countless early 80's pop-synth New Romantic groups such as Duran Duran, Heaven 17, Flock Of Seagulls, and the list goes on and on.
