I've never really been into gangster movies, I haven't even watched Reservoir Dogs! If I had to pick a few to watch over a weekend, what should I choose? The Godfather? Goodfellas? Casino?

You mentioned three of the best IMO. I also liked Godfather II, Donnie Brasco, The Departed, The Untouchables, and Pulp Fiction. Reservoir Dogs is really good too I think........

I do like Pulp Fiction actually, and I remember watching the Untouchables back in high school for my American History class (although I don't how close to actual history it was).
Reservoir Dogs is the only Tarantino film I haven't seen.

Nobody mentioned LA Confidential yet. Although it focused on the police (in the same way that The Untouchables did) it really is an excellent movie.

No one mentioned "Miller's Crossing" which is an excellent Coen Brothers film from the early 90's. Also, let's not forget about Scorsese's "The Departed" which is just great!
Some of my other favorites:
The Godfather The Godfather II Goodfellas City of God Mean Streets Casino Reservoir Dogs Snatch Donnie Brasco

All good ones so far, out the recent gangster movies 'The Departed' is excellent. 'The Last Don', though a mini-series is still Mario Puzo and worth seeing, 'Last Don II' isn't Puzo but a watchable sequel nonetheless.
